Whitefish roe from Kalix

Whitefish roe made from the roe of the vendace, which is among a group of salmon fishes. The whitefish thrives best along the northern coast of the Baltic Sea, especially at the mouths of the rivers in the Gulf of Bothnia. The best roe is considered to come from the whitefish caught in the waters outside Kalix.

Famous chefs have called Kalix roe “the world’s best whitefish roe”.

Salmon salad with prawns

(serves 10)

500 g Feldt's Spiced Norwegian Fjord Salmon, cut into strips.
250 g Feldt's Crayfish tail in brine, cut into chunks.
2 Eggs, chopped.
1 Leek, cut into thin strips.
75 g Fresh spinach, coarsely torn.
1/2 Cucumber, cored.
3-4 tbsp  Mustard sauce before being mixed with cream.

Mix the leek, prawns, cucumber and salmon into the sauce. Carefully fold in the eggs. Arrange the spinach on a plate and spoon the salmon mixture on top, garnish lightly with lemon and coctail tomatoes. Serve with good bread.

Fluffy mustard sauce

2 tbsp French mustard
1 tbsp Swedish mustard, preferably coarse grain
1 tsp Red wine vinegar
1 dl Rapeseed oil
1,5 dl Whipping cream (stir in immediatley before serving) or créme fraiche
Sugar
Chopped dill

Mix together the mustard, vinegar and sugar. Trickle in the oil. Whip the cream and add before serving together with a pinch of dill.
